Grind size is what changes the cup

More than beans or equipment, grind size determines whether coffee tastes right. Too coarse and the water passes through too fast, giving a thin, sour cup. Too fine and it over-extracts, giving bitterness.

  • French press — coarse, like sea salt
  • Filter and pour-over — medium, like table salt
  • Espresso — fine, like caster sugar

Burr grinders produce a consistent grind; blade grinders chop unevenly, which means part of the same cup is over-extracted and part under.

Water temperature

Boiling water scorches coffee and green tea alike. For coffee, let a kettle stand 30 seconds off the boil, around 92–96°C. Green tea wants 70–80°C; black tea takes full boiling water.

Cleaning

Coffee oils go rancid and are the main reason a machine starts tasting bad. Rinse brewing equipment after every use and descale anything with a heating element every few months, more often in hard-water areas.
